Shakawath Hossain secures copyright for food cost optimization framework


The copyrighted system,
titled “Shakawath’s Six Control Points for Food Cost Optimization,” focuses on
six areas: purchasing, inventory, transfers, portion control, cooking methods
and waste management.
The framework connects
purchasing, receiving, stores, cost control, finance, culinary and food and
beverage operations within a single management approach.
According to the company,
the system has been used at The Westin Dhaka, Sheraton Dhaka and HANSA – A
Premium Residence since 2023. Its implementation has contributed to about BDT 2
crore in food-cost savings across the three properties, while increasing
awareness of cost management among employees and department leaders.
The initiative has also
been incorporated into the Tourism and Hospitality Management curriculum at the
University of Dhaka. Plans are underway to introduce the framework through
additional academic and professional training programs.
Beyond financial savings,
the system emphasizes reducing food waste, purchasing based on actual
requirements, managing inventory and maintaining appropriate portions without
compromising food quality or guest satisfaction.
Hossain said the
copyright recognition represents an important milestone and that efforts are
underway to expand the framework across Bangladesh’s hospitality industry and
explore potential adoption by international hotel brands.
